There seems to be a bit of controversy with this, we can begin with the fact it's a fucking octopus and not a squid.

Now one version says that the "squid" is dead, but sodium ions in the soy sauce stimulate active neurons in the recently killed animal.

However another source says it's a "live squid with its head removed". Because you get a lot of stuff which is live with its head removed.
