    Default Food pics from Edinburgh

    Went for a Thai meal tonight in Edinburgh, as the restaurants are so much better there than in Aberdeen. The restaurant was called Phuket Palace and we had the usual stuff for starters: Thai fish cakes, chicken satay, tempura prawns, spring rolls, pork ribs and chicken with some kind of minced meat inside.

    (The fish cakes are missing from the picture because we had eaten them before I remembered to take a photo. )

    Then for the mains, I had a Chicken Panang curry, which was really lovely. It was smooth and creamy but had a spicy kick to it as well; very yummy.

    OH had sweet and sour chicken.

    And the rice, which was coconut flavoured, came in half a coconut shell, so it seemed like you were spooning out the flesh from the coconut when you served it onto the plate.

    I love coconut rice. I'd never had it until my father in laws 60th, it's the most delicious thing ever. His wife ordered some and I ate most of it not realising. She kept looking around the table saying "where's the coconut rice, they've forgotten the coconut rice". I felt awful, so I kept my mouth shut when I realised I'd been eating it. I carried on though.

    I've never tried coconut rice. I'll put in on my must try list

    It's yummy. You can actually make something like it by replacing some of the water that you boil it in with coconut milk.

    It's nice with jerk chicken

    I use little sachets of creamed coconut

    Just watch the rice after you put the coconut in because it starts to stick to the pan

    Yeah, that might work better than coconut milk as it does have a creamy texture.
